Conserve lemons by inserting

Although I consume a lot of lemons, it sometimes happens that I already buy the next net, although I still have a start. Before they mold me over time, I simply insert this net of lemons to make it last.

Here is a little guide:

  1. Let's go, so I wash the lemons thoroughly with hot water.
  2. Then halve and quarter as many lemons as fit in a mason jar. The others are only half-laid aside.
  3. Now I put 100 g salt in the glass. Press the lemons from which I have set aside in half.
  4. The juice is enough with a cucumber glass, (which I use as a preserving jar) so that the lemons are completely covered with the liquid (they must be completely covered).
  5. Now the glass is screwed on and shaken well once, and then left alone for a week at room temperature.
  6. When the week is over, the jar must be opened and the surface sealed with 5 tablespoons of oil. (The lid is now perforated with air holes.)
  7. Then put in the refrigerator.

The lemon pieces are now refrigerated for about 4 to 5 months.
