Chinese sweet and sour vegetables

My Asian fried chicken pieces and basmati rice fit this.

Ingredients for the vegetables for 4 persons:

1 red pepper
2 carrots
100 g of cucumber
100 g of celery
1 clove of garlic
100 g of pineapple cubes
Vegetable oil (it tastes better with peanut oil!)


2 tablespoons soy sauce
5 tablespoons tomato ketchup
5 tbsp red wine sauce
Juice from an orange
1 teaspoon lemon juice
50 g of sugar
200 ml of broth
1 tbsp cornstarch / potato starch
Sambal Oelek

Preparation:

Free the pepper from the core casing and the white dividing walls, cut the pulp into fine strips. Clean carrots and cut into fine pens. Peel the cucumber, cut into thin strips, cut the celery into slices of breadcrumbs, peel the garlic clove and finely chop.


Heat some vegetable oil (peanut oil is better) in a pan and fry the garlic in it. Add salt, then soy sauce, tomato ketchup, red wine vinegar, orange and lemon juice and sugar and simmer until the sugar has dissolved.

Now add the meat stock and paprika, carrots, celery and pineapple. Cook over medium to low heat for 6-8 minutes until firm. Mix 1 tbsp cornstarch with 2 tbsp water and add to the vegetables.

Let it boil again. Serve with basmati rice and the fried chicken pieces.
