Corn salad with oranges, fennel and goat cheese

ingredients

  • 1 pce of lamb's lettuce (or Ruccola)
  • 2-3 oranges
  • 1 fennel tuber
  • 1 - 2 goat's reel (s)

for dressing:

  • Olive oil (or nut oil)
  • Orange juice (from the rest of the filetted oranges)
  • white balsamic
  • 1 tsp of granular mustard
  • 2 cloves of garlic
  • 2 tsp honey
  • Salt pepper

preparation

  1. Wash corn salad well
  2. Fillet oranges and express the rest well and catch
  3. Cut fennel into very fine strips
  4. Cut the goat's cheese into half thin slices, mix everything carefully.

"I make the dressing by shaking everything (garlic through the press!) In a closed jam jar. Tasting, should not be too sour, otherwise a little honey.

Just fold in the dressing just before serving. For the special taste you can still roasted and slightly salted sunflower seeds.

Super yummy and fresh with grilled poultry or stir-fry.
