Cream cake with fruity filling

"WUNDERTORTE "- A great cream cake with a surprisingly fruity filling - which is easy to bake!

A long time ago, I got this great but pretty simple recipe, from a friend and have baked this cake many times already and she has always been very well received by our guests.

ingredients

  • 100 g of margarine
  • 100 g of sugar
  • 4 egg yolks
  • 150 g of flour
  • ½ packet of baking powder
  • 1 packet of vanilla sugar
  • 4 egg whites
  • 180 g of sugar
  • about 100 g to 200 g almond flakes

preparation

  1. All ingredients (except egg whites, sugar and almonds) are stirred well one after the other and the dough is then spread on two greased springforms.
  2. The 4 egg whites are beaten stiff with 1 pinch of salt, while you gradually add the sugar.
  3. Then spread the egg white on the two trays and sprinkle with the almond flakes.
  4. Baked both soils for about 25 minutes at 180 ° C (top and bottom heat in a preheated oven.

filling

  • Beat 600g whipped cream with 3 sachets of cream firm.
  • You can add some fine sugar (better powdered sugar) at will, but this is not absolutely necessary.

completion

  1. Then spread a layer of whipped cream over one of the baked and cooled soils and a layer of dripped fruit and dried with kitchen paper (I prefer sour cherries or blackcurrants from the glass), but also blueberries or pineapple in pieces are doing well. But you can also use, depending on the season, any fresh berries or fruits, depending on your taste.
  2. Over the fruits comes again a layer of cream and finally you put the second floor, which is best divided into pieces before, as a blanket. So the cake can then better cut into pieces.
