Cup bread with psyllium husk

This bread is prepared in a few minutes and comes without yeast or baking powder. The ingredients can be selected according to taste, ingredients and tolerability. Important is the binder: psyllium husk. They hold everything together and ensure a wonderful digestion (not too fast and not too lazy).

  • 70 g? Dry? Ingredients, about 50 g of cereals (grains, flakes, flour) and 20 g of seeds, for example
  • 4 go EL oatmeal
  • 1 go EL flour
  • 1 go EL flaxseed
  • 1 go EL sunflower seeds
  • 1 pinch of salt
  • 1 tbsp (= 5 g) psyllium husk
  • 75 ml of water
  • if necessary for the cup some oil or nutmeg and 1 teaspoon of poppy seeds

preparation

  1. First separate the dry ingredients and then mix well with the water.
  2. Let it swell for a few minutes (the ingredients are swollen enough, if you can turn the glass over without the mass falling out).
  3. In the course of time, streak a microwaveable cup or glass with some oil or nutmeg and sprinkle with poppy seeds or other crumbs. This gives additional flavor, but is not absolutely necessary. The bread can also be so well out of the cup.
  4. Pour the dough lightly into the poppy-seeded cup (do not press in), just smooth the surface. You can also bake the bread in the cup in which the ingredients have been mixed, as long as it is suitable for microwaves.
  5. At 750-1000 watts, place in the microwave for 2-3 minutes.
  6. Take out the cup and bring down the bread, in hot condition you can, if necessary, make some more with the dough scraper. Allow to cool slightly.

If you would like bread with a roast aroma, you can either roast the dry ingredients in a dry pan before preparing them or toast the finished bread in the dry pan all around after baking.


The recipe results in a bread that can be cut into 5-7 slices. The glass used can also be used as a template for cutting out the covering. The bread is very rich in content and by the use of whole grains one has also good to chew. That makes you very tired and lasts for a long time.

The dry ingredients can be varied in many ways, but they should be ingredients that you can eat raw or short-cooked. I have experimented a lot and also tried to omit the psyllium or replace it with linseed or chia seeds. The result was best with the psyllium seeds. In addition, I have always paid attention to a good mix of coarser and finer ingredients. The largest grain size had the sunflower seeds, but you also need finer ingredients such as flour or tender oatmeal to achieve a good dough consistency.

Oat bread:

2 heaped tablespoons oatmeal, 1 heaped EL oat grains, psyllium, linseed and sunflower seeds. 1 pinch of salt and olive oil and poppy seeds for the form (these are the ingredients that you see on picture 2).


Pizza bread:

In addition to the base mix, add 1 tbsp grated cheese and 1 tbsp Provencal herbs to the dry ingredients and tomato paste into the water.

Muesli bread:

4 tablespoons of meaty oats, 1 heaped tablespoon of flour, 2 tablespoons of ground / chopped almonds or nuts, add 1 tablespoon of dried fruit to the dry or 1 teaspoon honey or jam in the water, brush the cup with nutmeg or butter.

Pizza bread and muesli bread are delicious even without any other topping.

You can mix the dry ingredients in larger quantities in stock and then fill in cups and bake. When using a tumbler (screw jar with wide opening and grader wall) you can also take the dry ingredients with you and on the way z. B. fill in the office with water. The dry ingredients have about twice as much volume as the water, the mixing ratio you can quickly get out and get it even without a measuring cup or scale.
