Fried potatoes as from the professional

For the really crispy fried potatoes use only raw potatoes.

preparation

  1. Cut the potatoes into thin slices and rinse briefly with water. Then dab dry well. This prevents the potato slices from sticking together when frying.
  2. In a pan, let oil and butter get hot. It must hiss when the potatoes are put in it.
  3. Fry for a few minutes from one side, then gently turn. Do not turn too often so they do not fall apart.
  4. Just before serving add chopped shallots and / or ham cubes.
  5. Only at the end spice up with a mixture of salt, pepper and paprika (I always mix that).

Never spice while frying: The salt makes the potatoes draw water, pepper and pepper burn while frying and make things bitter.


If you like, you can finally add fresh chives over it.

Serve on warm plates!

Tip for the north: Instead of ham cubes you can also add North Sea crabs. Leak First!
