Fruity sea buckthorn jam

I love sea buckthorn jam and for years I buy some glasses with every North Sea holiday. Last year, I happened to see frozen buckthorn fruits in our Turks in town and of course took them away immediately.

Some attempts were for the cat, the result very sour and tart. But I also did not want to take more sugar. Then my Williams pears were ripe in the garden, had an idea and would like to share it with you now. Maybe there is one or the other Sanddorn fan.


preparation

  1. Thaw 500 g sea buckthorn, mix and pass through a sieve (this will give between 350 g and 400 g).
  2. This then with Williams pears (fresh or canned, rather fresh) to 1000 g.
  3. Then stir in 500 g preserving sugar 2: 1 and bring to a boil as usual and fill in jars.

This is a treat, even on waffles with cream or extremely good in a biscuit roll.

This jam is not too firm but has a "velvety" consistency.

If you like it harder, you have to take a little more sugar, which the sea buckthorn fruits can tolerate.
