Gazpacho, green tree frog from green vegetables

This surprisingly green gazpacho is very refreshing on hot days. A sandwich, followed by a plate of berries with yoghurt - and you have a full meal.

Here are the ingredients:

  • 1 large peeled cucumber
  • 1 large, green pepper
  • 1/2 bunch chives
  • 1 stick celery with green
  • 300 ml of clear apple juice - not the naturally cloudy version -
  • Juice of a lemon
  • 1 tbsp sour cream
  • Salt, pepper, very little chilli powder
  • 1 tbsp olive oil

And so it goes:


All ingredients are either in the blender / food processor, or are filled in a bowl and mashed with the electric stir bar.

This amount is enough for 5 to 6 glasses.

Serve with ice cubes and a stick of celery with the green on it.
