Grated cake for all tastes - variations

Potato pancakes can be a very versatile food - for all tastes, in varying variations - and right now after Carnival, when Lent begins Reibekuchen bring a lot of variety and rub even with only once potatoes, because the side dishes it comes in the end!

Ingredients and preparation

At e.g. 6 people I take each person about 300 g of potatoes = well calculated I say:

  • 2 kg of potatoes
  • 2 eggs
  • 2 medium onions
  • Pepper, salt, nutmeg
  • Juice of a lemon
  • maybe some flour

I rub the potatoes with the Moulinette and the onions are immediately grated. If the potato mass seems too watery for me, I put it on a fine sieve and catch the potato water. In the remaining mass I give the lemon juice (then the mass does not brown so quickly), the eggs and season to taste strongly with pepper, salt and nutmeg. In the remaining potato water, the potato starch has now deposed. That's why I'm pouring the water off now and I'll put the starch back into the potato mass. If this is still too liquid, I add some normal flour. Then do not bake too thick pancakes in hot oil.

"Fish supplements"

  • smoked salmon
  • Pieces of smoked eel or too
  • very well boned kipper or mackerel

  • Apple compote
  • Beetroot (beetroot)
  • Apfelkraut

  • Cherry compote
  • fresh pineapple
  • Slices from the star fruit

With the fish side dishes I recommend for the smoked salmon freshly cut onion rings, these also for Bückling or mackerel. For the eel pieces a cream horseradish is appropriate and for the Matjesfilets a cranberry cream. The latter two are very easy to prepare:

  • Beat 1 cup of cream
  • Add 1 to 2 tablespoons freshly grated or prepared horseradish and a pinch of salt and sugar

and keep the cream until it is very cold.

  • Beat 1 cup of cream
  • Stir in 2 tablespoons of cranberries, also
  • Add 1 pinch of salt and sugar and also
  • keep cool until use.

To the normal side dishes there is nothing enlightening to say, surely everyone knows.


I use the unusual side dishes

Remove 1 glass of sour cherries and mix with 2 tablespoons cornstarch

Bring the cherries to the boil with the remaining juice and stir in the cornstarch / juice mix. Allow to cool slightly, but still warm to the potato pancakes.

Peel and slice the fresh pineapple. Place them on the cake and feed them. You can also proceed with the star fruit slices. If you like, add some powdered sugar to pineapple and star fruit to soften the acidity of these fruits. But I think, this acid fits in particularly well with the potato cake.
