Brandys Hühnerfrikassee: Poultry of any kind is very popular on our menu and therefore there was again my chicken fricassee, which is eaten again and again, not only by us, but also by our guests. I do not want to deprive you of my cooking style and have written down the recipe for you.

We are usually only two people in the household and therefore I have not bought a whole chicken or chicken, but only 4 chicken thighs, which also have enough tender meat, and make the dish sufficient for us.


ingredients

  • 4 chicken thighs with back piece
  • 250 ml of water or chicken stock
  • Salt and a few saffron threads for the broth

Vegetable Insert:

  • 1 handful of TK peas
  • 1/2 glass of mushrooms
  • 2 - 3 small carrots
  • some asparagus sections

Bright sauce:

  • 1 piece of butter
  • 1 tbsp flour
  • 150 ml chicken broth
  • 200 ml of cream
  • 150 ml of dry white wine
  • a little lemon juice on request
  • freshly ground pepper
  • salt
  • nutmeg
  • smooth chopped parsley

preparation

  1. The chicken legs I have the day before in the pressure cooker, - no, not in the advertised here, but in years already in my possession own pot of another brand - cooked a 20 minutes and then taken the pot from the heat and let cool until that he let himself be opened without pressure. The chicken legs I have taken from the broth and set cold, as well as the broth, which also received a place in the refrigerator until the next day.
  2. In the total preparation time, I added the cooking time of the chicken thighs the day before and also the waiting time until the next day of preparation.
  3. The chicken meat I have solved after cooling from the bones and also the skin was carefully removed. The meat was then also in the fridge.
  4. The next day in a larger, flat pot, I melted a piece of butter, stirred in the tablespoon of flour and poured it on with the chicken broth. Then the wine and finally the cream came. Finally, it was seasoned with freshly ground pepper, salt and a little nutmeg. If desired, a little lemon juice completes the taste.
  5. After the sauce production, I have the described vegetables in the sauce and also the chicken meat was added.
  6. For the mushrooms I had to fall back on canned goods, because I had no fresh mushrooms in the house. Fresh mushrooms naturally have a more intense taste and give the sauce a special kick, but what was not there, I could not use unfortunately and so had the canned mushrooms to believe.
  7. In the meantime, the rice - I had brown rice - finished cooking and it can be done. A little chopped smooth parsley looks good as a decoration and is also very suitable in the fricassee for the taste.
