ingredients
- 500 g hack (half pig, half beef mixed)
- 1 onion finely chopped
- 2 garlic cloves pressed
- 1 leek cut to the light green part in half rings (about 5mm wide)
- 2 tablespoons of parsley finely chopped
- 1 egg
- 1 egg to coat the vortex
- 2 tbsp breadcrumbs
- 2 tablespoons oil
- 1 tsp tarragon mustard
- salt
- pepper
- 275 g of puff pastry from the refrigerated rack
For the garlic sauce:
- 250 g sour cream
- 2-3 cloves of garlic pressed
- 1 tablespoon of chives chopped
- salt
- White pepper
preparation
- Lightly fry the onion in the oil and fry the leeks briefly.
- Add the hack and roast until it decays. Set aside and allow to cool, otherwise the puff pastry will be too soft.
- Add the egg, garlic, mustard, parsley and breadcrumbs to the chilled mixture and season with salt and pepper.
- Apply this mass to the lower third of the puff pastry, wrap in the side edges and roll up.
- Lay the strudel with the seam side down on a baking sheet covered with baking paper and brush with the whisked egg. Pierce with a fork several times.
- Now the strudel is baked in a preheated oven at 200 ° for about 40 minutes.
- For the garlic sauce, mix only all the ingredients indicated.
