Kohlrabi potato rösti with herb quark

These crunchy kohlrabi-potato-rösti-thalers always taste good. I usually prepare a larger amount of it, because they also taste very wonderful cold and therefore are also very good for traveling on hikes or bike rides!
Ingredients for 5 to 6 servings
For the rösti
- 600 g kohlrabi
- 600 g of potatoes
- 1 big onion
- 2-3 eggs
- 85 g of pungent oatmeal
- 6 heaped tablespoons of wheat flour
- 3 tablespoons sunflower seeds
- Pepper, salt, cumin, a little nutmeg and chilli flakes
- Rapeseed oil for frying
For the herbal quark
- 500 g of low-fat quark
- some milk (or cream)
- a little olive oil
- fresh herbs at will (parsley, chives, dill, basil, arugula, sage ...) you can also take TC herbs
- Salt, pepper, caraway, chilli flakes
preparation
- Peel kohlrabi and potatoes and grate them roughly, then place in a dishcloth and squeeze out the moisture.
- Dice the onion very finely and place in a bowl with vegetables, eggs, oatmeal, flour and sunflower seeds and mix well.
- Then season the mixture with salt, pepper, cumin, nutmeg and chilli vigorously.
- Heat the oil in a non-stick pan and add the mixture to the pan, one spoon at a time, pressing flat with the back of the spoon and bake crispy until golden brown on both sides.
- Mix the quark with milk or cream, olive oil and the chopped herbs and season well with salt, pepper, cumin and chilli flakes.
- The roasted rösti is then served warm with the herb quark!
Another tip: These rösti taste cold the next day, despite the spices, even with sugar and / or applesauce very good!
