Mushroom Risoniotto

Today I would like to put a recipe to your heart, which I discovered by a "Fehl" purchase actually only.

Last night, I quickly shopped in the evening when I was in stress and actually wanted brown rice and grab hold of shelves, pay the whole thing and at home I notice Madmoiselle did not buy any rice but Risoni. Risoni (or even Orzo or Kritharaki) are small rice-grain-sized pasta made from ordinary durum wheat.


So what do I do with my bad buy?

After a little research, I have found various risotto recipes and then a little bit mixed up, or changed and come out is the following super delicious recipe:

Ingredients:

(about 2-3 people)

  • 150-200 g Risoni
  • about 500 g of mixed mushrooms (mushrooms, herbs, mushrooms, oyster mushrooms, mushrooms, chanterelles, shiitake ... etc .. what the season so forth
  • 1-2 cloves of garlic
  • 50-100 ml creme fraiche
  • 75 ml of dry white wine
  • 1 tsp balsamic vinegar
  • a few sprigs of thyme
  • Salt pepper
  • 1-2 tbsp olive oil
  • a little butter
  • Smooth parsley

preparation

  1. First, clean the mushrooms and cut into slices / pieces.
  2. Put the pasta water and cook the Risoni according to the instructions on the packaging and drain.
  3. Approximately Heat 1 tablespoon of olive oil and a little butter in a pan and fry the mushrooms. (Depending on the amount, the mushrooms are best seared in portions -> mushrooms should roast and not stew in the liquid).
  4. Then put all the mushrooms back into the pan and deglaze with crushed garlic, peeled thyme leaves and the balsamic vinegar. Approximately Continue to fry for 1-2 minutes.
  5. Then add to the white wine and let it boil down a bit.
  6. Bake with the crème fraîche, bring to the boil and season with salt and pepper and add the cooked risonis. It should not be too much "sauce", the consistency, should resemble that of a Risotto -> So not so liquid.
  7. Sprinkle with chopped parsley and enjoy!

Is now one of my favorite recipes. I also liked Risoni! It's fast and easy to do ... I hope you like it as much as I did and some of you tried it, so feel free to post it here!
