Mustard Quick Cucumber

Have found the old recipe for mustard cucumbers in my self-written recipe book. I think it suits summer well.

With a few simple steps and ingredients a tasty side dish for grilling or bread.

ingredients

  • 1 kg of cucumber pieces
  • 2 teaspoons salt
  • 3 tbsp sugar
  • 6 tablespoons of vinegar (I take essence)
  • Onion, mustard seeds, peppercorns (I'll take a thumbs turn)

preparation

  1. Peel the cucumbers, hollow out the core housing with the spoon and cut the cucumbers into pieces. I do not cut the pieces too small. Add onions in pieces.
  2. Then I sprinkle all the spices over it and add the vinegar. Mix everything well with a wooden spoon.
  3. Cover the bowl and chill overnight (I take a bowl with a lid, it stirs better than in a stone pot).

The broth forms by itself overnight through the cucumbers. The cucumbers taste a day later, but also the next few days, if you like them softer.

Incidentally, this goes with every cucumber, even with the snake cucumbers from the supermarket.
