Omelette with cream cheese and cherry tomatoes

Ingredients (for one person)

  • 2-3 eggs (depending on size)
  • some Milk
  • 3 to 4 cherry tomatoes (of course also with "normal" tomatoes)
  • about 50 g cream cheese / goat cheese
  • oil
  • salt
  • pepper
  • Fresh herbs (parsley, chives, basil)

preparation

  1. Whisk eggs and milk with a fork, salt and pepper (you can also do afterwards). Heat some oil in a pan. Slice the tomatoes. When the oil is hot enough, pour the beaten eggs into the pan.
  2. Stir eggs for approx. 3 minutes until the omelet comes off the ground by gently shaking the pan. If not; Waiting! Then turn the omelette.
  3. Now spread the cream cheese and tomato slices over the omelette. (Tomato slices may be lightly pressed into the omelette "dough.") The cream cheese melts by itself. Then put the bottom side halfway over the top.
  4. Chop herbs and sprinkle over the omelet, possibly salting.
  5. Finally, carefully slide the omelette onto a plate. With 1 or 2 slices of toasted bread the ideal snack.
