Paprika banana salad with olives

Paprika combined with banana sounds a bit strange at first, but this combination really tastes great.

My mother-in-law is a great cook and she also likes to try out curious things. This includes the combination of peppers with bananas and as if this mixture would not be special enough, then olives come into play. I did not believe it tasted at first, but was told otherwise. It tastes very delicious indeed.

ingredients

  • 3 - 4 peppers (red or orange)
  • 2 bananas
  • 1 apple (Boskop)
  • a handful of black olives
  • some walnut kernels
  • Juice of a lemon
  • salt and pepper
  • Sugar (about 2 tsp)
  • Oil (about 4 tablespoons)
  • Balsamic vinegar (2 tablespoons)

preparation

Mix lemon juice, salt, pepper, sugar, oil and vinegar into a dressing. Cut the onions and the apple into small pieces and place under the dressing. Wash the peppers, core them and cut into thin strips. Peel and slice the bananas, also slice the olives and add everything to the salad dressing. Mix well and serve with some bread.
