Paprika chicken

For those who like chicken and maybe spicy, I'd like to introduce this - my recipe. ? Paprika chicken? (Paprika chicken) is very well known and loved in Vienna - maybe I can inspire you too. I prepare this, due to time constraints, in the pressure cooker (cooking time 10 minutes) of course you can also prepare it in the pan (about 30-40 minutes).

This is not an advertisement for pressure cookers!


Unfortunately, like many people, I have little time for cooking. That's why I deeply regret that for these reasons I do not have the time to photograph or document the individual steps of the cooking or frying process (or even the ingredients).

Therefore, I try very hard to describe the individual steps more or less exactly - if after cooking all are full and I have time. But now for the recipe:

ingredients

  • 1 chicken divided into 4 parts (I only use chicken legs)
  • 1 large onion finely chopped
  • 2 cloves of garlic finely chopped
  • 1 red pepper (half cut into small pieces, the other half cut into strips)
  • 1 tbsp oil
  • 1 teaspoon paprika powder
  • 1 teaspoon paprika powder mild
  • 1 tablespoon tomato paste
  • 250 ml of water
  • 250 ml of sour cream and 1 tablespoon of flour, stirred until smooth
  • salt

preparation

  1. The chicken parts (I use these with skin, as they are very important for the juice) salt well. If you do not like the chapped skin after cooking, you can remove it before serving.
  2. Some recipes say that you should rub in the chicken pieces with salt and paprika.
  3. I avoid that, because the paprika burns when seared easily and becomes bitter!
  4. Now the chicken parts are seared with the oil, preferably in a coated pan.
  5. These parts are then parked or kept warm in another pan (or pressure cooker).
  6. In the remaining frying fat, the chopped onion / garlic is lightly roasted, pepper cubes, tomato paste, and paprika powder added and briefly roasted.
  7. The mixture is added to the water and allowed to boil briefly and then poured over the chicken pieces in the pan or pressure cooker.
  8. As already written, this dish is now cooked in the pan, with the lid closed (about 30-40 minutes) or in the pressure cooker (10 minutes).
  9. Once the meat is cooked, the pieces are once again stored in a different container.
  10. If you have time and desire, you can puree the sauce with the hand blender so that the sauce is particularly fine and smooth.
  11. Either way, this sauce is boiled and added the cream-flour mixture.
  12. Cook until the sauce turns creamy.
  13. Finally, the chicken parts are placed in the sauce until they are hot again.
  14. When serving the other pieces of pepper, as a garnish, put on the chicken pieces.

Spaghetti, spiral noodles or other pasta fit as a side dish.
