Pea soup "different" - quick recipe

I owe this recipe to my friend Susanne. It is ideal as a simple and fast to prepare appetizer and also makes something visually!

If you want, you can save a few calories by using yogurt instead of cream. The soup is also a little fresher, which some even prefer. This is needed for 2 to 3 people:

ingredients

  • 1 packet of frozen peas (400 to 500 g)
  • 1 vegetable onion
  • 1 tablespoon vegetable oil
  • 1 tsp butter
  • Vegetable broth, fresh or instant
  • 1 good handful of sliced ​​almonds
  • 1 pint of natural yoghurt, sour cream, cream or soy cream
  • Sugar or maple syrup, salt, pepper

preparation

  1. Clean the onion and cut very finely. Fry the onion in glassy sauce in a saucepan with lid.
  2. Add the peas and swirl briefly, then fill with broth until the peas are covered. Put the lid on it, turn the stove down and gently let the peas go.
  3. This takes about 10 to 15 minutes, depending on whether the peas were added frozen or thawed. However, it is important not to rely on the clock, but to check it out - the peas are not supposed to be soggy, just barely.
  4. Meanwhile, melt the butter in a pan and toast the almonds with 1 teaspoon maple syrup or 1/2 teaspoon sugar and a little salt in it.
  5. When the peas are ready, they are pureed in the broth. Season with maple syrup (or sugar), salt and pepper. Serve on the plates and decorate with a thick dollop of yogurt or cream. Then sprinkle the almonds on the blob, serve.

Of course you can also pretzel the soup by adding more ingredients - I could imagine toasted white bread cubes, smoked salmon pieces, small, cooked potato or parsnip cubes or simply a few non-pureed, cooked peas very well.
