Potato Gingerbread

Yes! You read that correctly: from potatoes! taste great juicy!

In 4 months is only / again Christmas, but in the current weather, I just come to the following recipe in the sense.

Ingredients (40 pieces)

  • 6 eggs
  • 750 g of sugar
  • 500 g of ground hazelnuts
  • 100 g each of lemon and 100 g of orange peel - chop both finely
  • 1 1/2 teaspoon cinnamon
  • 500 g potatoes cooked the day before
  • 3 sachets of baking powder and 450 g of flour

preparation

Finely grate the cooked cold potatoes (I have a metal grid, which is also used for cooked dumplings) with all the ingredients knead carefully and spread on round or rectangular wafers.


Attention: do not give too much mass on it, because this is still apart when baking!

Bake at 175 degrees for about 20 minutes. After cooling, the gingerbread either with chocolate couverture, icing or leave nature.

The first quantity I used the first time and had about 40-43 gingerbread. Since the gingerbread are without preservatives and do not last as long as purchased, I have then had to give away many. The recipients were full of enthusiasm, but the following year I used only the following amounts, almost half:

Ingredients (20 pieces)

  • 3 eggs
  • 375 g of sugar
  • 250 g of hazelnuts
  • 50 g each of citronate and orangeeates
  • 1 teaspoon cinnamon, 250 g boiled potatoes
  • 1 1/2 sachets of baking soda
  • 225 g of flour

This resulted in round wafers about 20 gingerbread.
