Rollmops homemade

Ingredients:
Salted herring (usually as 2kg bucket or tubular bag)
Vinegar, water, mustard, onions, sour cucumbers, toothpicks

Tip away the original dip and place the pegs in fresh cold water. 12 hours or change the water 2-3 times.

For 2kg of salted herring boil 1 liter of water with 0.5 liter of 5% vinegar. Laurel leaves, mustard seeds and 1 teaspoon of brewing paste can be added. Lid on it! It takes longer to cool down, but the kitchen smells better.


Carefully halve the fish with your thumb along the central bone. Depending on the desired pug size, you can let the flaps on the back skin together. In this case, do not remove the dorsal fin. Now carefully pull the middle bones out of the fillet from the back. If some bones remain in the abdomen, this is not critical. But all remaining fins must be removed.

Spread the fillet neatly with the mustard, put the sour cucumber and half an onion poppy, roll up and fix with a toothpick. Place in a large bowl and finally tip over the cooled vinegar marinade. If there is too little marinade, boil water and vinegar now in the ratio 3: 1, cool down ...

After two days, the pugs can be tested, but they taste only after a week.
