Simple mushroom cream soup

When I last needed a can of mushroom cream soup, unfortunately, there was none. I had found a very delicious recipe at FM (chicken with mushroom cream soup baked) and wanted to cook it immediately. As I said, no soup there and no shop open. After some pondering came to me the idea to try it myself. Since it worked and also tasted, I wanted to let you participate. It can be eaten as a soup or baked.

You take:

1/2 l of milk can, but does not have to be low in fat
1/2 cup of whipped cream (who likes taking a whole mug) or a cream substitute
1 can of mushrooms sliced ​​with the liquid
Salt pepper
Vegetable brewing powder or whatever is there
some nutmeg
who likes can take sweet paprika to it


The whole is put in a saucepan and boiled. Finished. If you like, you can cook a raw grated potato or cold-stirred cornflour to thicken. If you have decided on the potato, the soup should simmer for about 5 minutes before it is eaten.

If you want to gratinate the soup, cornflour is better. You then take a little more than just the soup; Depending on the taste - one likes it thinner, the other thicker. The temperature for baking is 200 ° C and depends on the particular desired degree of browning.

My first attempt was with chicken breasts, served with basmati rice and a slice of ciabatta bread to sauce ... The casserole was 1 hour in it, the soup was nice golden brown and of course by the chicken tasted even better. You could indeed take chicken broth as a substitute for vegetable broth to get a similar taste when you only potato slices baked.


If you like garlic and onions, they should first be simmered in some fat and the cooking time is extended to 20 minutes for soup. For gratinating it is sufficient if onions and garlic are fried glassy, ​​they cook in the oven even after.

If the calories are too much, you can try low-fat, but without fat, this recipe is not. Since many of us often have to be full and I do not always have enough time, not everything is calorie tested. But some of you who are reading here will still be happy to get something reasonably priced on the table.
