White asparagus with butter

- For 1 person, wash 250 g of white asparagus, thinly but carefully peel from the head, remove all woody parts and wash again.
- Cook in boiling salted water (just under 100 degrees) with a pinch of sugar, for 20 - 30 minutes.
- Drain the asparagus and place on a hot plate, pour plenty of melted butter or herb butter (parsley) (about 30 g), add a little butter.
- To do this, sprinkle with cubes of boiled or raw ham and sprinkle with freshly grated Parmesan.
