Stale bread - leftovers

With me it happens again and again, that there is still an edible bread, which is not bad, but also not really fresh, to throw away anyway much too bad. That's why I like making a big meal with eggs from such stale bread pieces:

  1. Slice the bread into finger-thick slices and then cut into bite sized cubes.
  2. In a pan, leave a decent piece of butter (depending on the amount of bread) and the bread cubes in it around medium heat (turn more often or stir) nice crispy brown roast.
  3. Finally, whisk 1-2 eggs (per person or portion, as desired) with salt, pepper and possibly chopped chives, pour over the Gröstl and let it stand (switch off the stovetop).

This fits a great leaf or cucumber salad with cream dressing, but also tastes great without a good appetite :-)
