Quince mousse with elderberry sauce

From the remaining pieces of quince after juicing you can also make a delicious mousse.

ingredients

  • 5 leaves of white gelatin
  • about 300 g quince
  • 25 ml of dry white wine
  • 1 vanilla pod
  • 2 egg yolks
  • 300 g of cream

preparation

  1. Soak the gelatine in cold water, squeeze, and dissolve in the hot wine.
  2. Scrape out the vanilla pods that mark Mark with the yolks.
  3. Carefully fold in the hot wine mixture and the quince, keep cool.
  4. When the mass begins to gel, add the whipped cream, then cool again.

Holundersoße

  • 150 ml elderberry juice
  • 250 ml of water
  • 2 - 3 tablespoons of lemon juice
  • 1/2 cinnamon stick
  • 100 g of sugar - boil everything together

Stir 2 - 3 tablespoons of cornstarch with 3 tablespoons of water until smooth, stir in the boiling juice and bring to a boil again.

If you do not have quince, you can also take quince jelly for the mousse. Then the consistency is smoother, because the mus is a bit rough due to the quince pieces.
