From the remaining pieces of quince after juicing you can also make a delicious mousse.
ingredients
- 5 leaves of white gelatin
- about 300 g quince
- 25 ml of dry white wine
- 1 vanilla pod
- 2 egg yolks
- 300 g of cream
preparation
- Soak the gelatine in cold water, squeeze, and dissolve in the hot wine.
- Scrape out the vanilla pods that mark Mark with the yolks.
- Carefully fold in the hot wine mixture and the quince, keep cool.
- When the mass begins to gel, add the whipped cream, then cool again.
Holundersoße
- 150 ml elderberry juice
- 250 ml of water
- 2 - 3 tablespoons of lemon juice
- 1/2 cinnamon stick
- 100 g of sugar - boil everything together
Stir 2 - 3 tablespoons of cornstarch with 3 tablespoons of water until smooth, stir in the boiling juice and bring to a boil again.
If you do not have quince, you can also take quince jelly for the mousse. Then the consistency is smoother, because the mus is a bit rough due to the quince pieces.
