Vegan microwave brownie in stock

Here's an idea on how to mix brownies - without an egg from the microwave - into stock and if needed make a quick cup brownie.

There are already many recipes for cup brownies from the microwave. What always bothered me about that was that for a cup cake you always had to get tens of ingredients out of the cupboard and put them away again. I have therefore mixed the dry ingredients in a larger amount in a storage can and must then only add the liquid if necessary.

ingredients

  • 1 cup of flour
  • 1 cup sugar (to taste partly also vanilla sugar or cinnamon sugar)
  • 1 cup of cocoa
  • 1 teaspoon Baking powder
  • 1 pinch of salt

preparation

  1. I use for measuring large cups that hold 250 ml. Mix the dry ingredients well and put in a storage tin. For this purpose, e.g. also an empty beverage powder box.
  2. For a cup brownie I then mix dry and liquid ingredients in the ratio 2: 1: 6 parts dry mix, 2 parts water, 1 part oil.
  3. In a microwaveable cup I add: 3 low heaped normal tablespoons or 6 level measuring spoons dry mix, 1 (M) EL oil (sunflower or rapeseed oil), 2 (M) EL liquid (water, coffee, orange juice, soy milk, mineral water, shower ... or whatever is currently there). The cup should not be more than half full with the dry ingredients, because the brownie is still rising.
  4. Then I stir well with a fork until everything is mixed and put the cup in the microwave for 1 minute (just as long as it takes to get a cup of coffee hot again).

The finished brownie can then be decorated with spray cream, ice cream, chocolate sprinkles, agave syrup ...

This mixture is very chocolaty and not too sweet, because I take real cocoa. If you like it sweeter, you need more sugar or, instead of cocoa, this sweetened cocoa beverage powder.
