Vegetable bread casserole - almost like in Mallorca

This casserole is delicious - I have eaten a similar version in a small garden restaurant in Mallorca. At home I experimented - here is the result:

It takes 4 people

1 half savoy cabbage
2 large onions
3 knickknacks
2 potatoes
1 small tin of tomatoes in pieces
1 can artichoke bottoms (can, does not have to)
2 carrots
1 small tin of big, white bean kernels (Turkish shop)
300 g of shredded pork from the shoulder
Pepper, salt, paprika, oil for frying, vegetable broth, 1/2 L
1 large bunch of parsley (Turkish shop or market)
8 slices of stale bread, maybe more to serve


That is how it goes:

Clean potatoes, carrots, Knofi and onions and cut into small pieces. Remove the stalk from the savoy cabbage, wash it and cut it as well.

In a large pan, gradually fry the vegetables in oil, when it is half cooked, take out and put in a bowl, then take the next variety.


In the meantime, open the bean kernel can, drain on a sieve. Open the can with the artichoke bottoms, drain, dice. Open the tin with the tomato pieces. Mix all canned contents with the vegetables ...

Place the slices of bread on a baking sheet with baking paper and olive oil, roast crispy in the oven, it should be really nice and hard.

Sauté the pork chops in the pan for about 5 minutes, heat off. Mix the meat - half cooked - with the vegetables.


Season well with salt, pepper and sweet pepper, mix well.

You take a large baking dish with a margin of at least 4 cm height for layering.

First comes some oil, preferably olive oil, into the mold. Then come the hard slices of bread. And now the vegetable-meat-mass is layered. Drizzle with oil.

Pour with a little vegetable stock, then put in the oven, 200 degrees, about 40 minutes. Always check - usually enough broth, you can refill if necessary. It should be moist but not soupy. The bread on the floor also absorbs moisture. If the casserole is too brown, then you can cover with aluminum foil.

To eat enough for extra hungry people still extra toasted bread, which is then on the casserole is rocked.
