Vegetarian vegetable pan with rice

A recipe with for a vegetable pan. Goes super easy, fast and is just delicious!

ingredients

  • 3 peppers (red, green, yellow)
  • 1 big onion
  • 3-4 cloves of garlic
  • 1 kl. can of corn
  • 1 tin of champinons
  • 1 medium zucchini
  • 1 can of peeled tomatoes
  • 1 cube of vegetable stock
  • 1 cube of meat broth
  • 1 cooking bag of rice
  • Salt, pepper, curry or Chinese spice
  • 1 tablespoon tomato paste
  • 1/2 packet of pureed tomatoes (ie without pieces)
  • 2 tablespoons of cream fraiche

preparation

So first cook the rice in salted water, after the package leaflet. Then dice the peppers, onion, garlic, champinons, zucchini and fry well with the corn in a pan with a little olive oil or other (to taste).

Then add the can of peeled tomatoes -> also chop the tomatoes. Then stir well and add the tomato sauce, the tomato paste and the stock cubes and season with salt pepper and Chinese spice. Then add the finished rice and the creme fraiche and stir well and ready!

Tip on the edge:

If you add some Gauda cheese cubes and let them simmer until they melt, you can also make super-stuffed peppers.
