  • 1 tbsp lard
  • 1,2 L rear made by yourself
  • 1 bunch of curly parsley
  • 40 g of ginger
  • 1 clove of garlic
  • Salt, pepper, chilli flakes
  • fresh grated nutmeg to taste

preparation

  1. Cut the Kassler into pleasing cubes
  2. Peel potatoes and cut into cubes as well.
  3. Pick up 1 potato, which is rubbed into the stew shortly before the end of cooking.
  4. Peel carrots and plane with a kitchen slicer into pleasing oblique slices.
  5. Peel and finely chop the onions and garlic clove.
  6. Clean the parsley and chop it roughly.
  7. Picking up some stalks of these are cooked with in the stew.
  8. Peel the ginger and finely chop.
  9. Melt the lard in a correspondingly large saucepan and fry the Kassler cube for about 5 minutes, remove and keep warm.

  11. When the onions are glassy, ​​add the potato cubes and simmer for a few minutes, add the stock and simmer for another 10 minutes.
  12. Add the parsley stalks and the ginger and simmer for about 5 minutes with the lid closed.
  13. Add the carrots and grate the potato and simmer for about 10 minutes with the lid closed.
  14. Add the cassettes and let the stew for a few minutes.
  15. Now remove the parsley stalks and season the stew with the spices to taste.
  16. Just before serving stir in the chopped parsley.
