Wintry Kassler Potato Carrot Stew

Wintertime is stew time and this is our? 3K stew recipe ?. We also like to eat this stew and I did not want to deprive you of the recipe. Delicious!
ingredients

- 1 kg Kassler neck
- 1 kg of floury potatoes
- 1 kg of carrots
Remaining ingredients
- 3 onions
- 1 tbsp lard
- 1,2 L rear made by yourself
- 1 bunch of curly parsley
- 40 g of ginger
- 1 clove of garlic
- Salt, pepper, chilli flakes
- fresh grated nutmeg to taste
preparation
- Cut the Kassler into pleasing cubes
- Peel potatoes and cut into cubes as well.
- Pick up 1 potato, which is rubbed into the stew shortly before the end of cooking.
- Peel carrots and plane with a kitchen slicer into pleasing oblique slices.
- Peel and finely chop the onions and garlic clove.
- Clean the parsley and chop it roughly.
- Picking up some stalks of these are cooked with in the stew.
- Peel the ginger and finely chop.
- Melt the lard in a correspondingly large saucepan and fry the Kassler cube for about 5 minutes, remove and keep warm.
- In the remaining frying fat, sauté the onion and garlic cubes (add some water so the onions do not turn black).
- When the onions are glassy, add the potato cubes and simmer for a few minutes, add the stock and simmer for another 10 minutes.
- Add the parsley stalks and the ginger and simmer for about 5 minutes with the lid closed.
- Add the carrots and grate the potato and simmer for about 10 minutes with the lid closed.
- Add the cassettes and let the stew for a few minutes.
- Now remove the parsley stalks and season the stew with the spices to taste.
- Just before serving stir in the chopped parsley.
... and yes, for us the ratio of meat to vegetables is right, grins.
