Abraxas' boletus goulash

You want to laugh again in the kitchen? So it is right. I write again n recipe (so please, who has no sense of humor, please go inside the basement, but without light!). Abraxas is just in the pot. Geschnibbeltes beef in delicious Sößchen.

Cattle must be one. That just has more flavor. And becomes budderzart, if you give the dismembered creature time. Abba we have, after all, this is not the kitchen battle.

So, how do we stop? First, let's soothe dried mushrooms (I'll pick succulent Steinis) in boiling water. Then we "clean" the meat. So, sinew, remove excess fat and cut into bite-sized chunks, dry-dabbed.


We'll take a big enough pot and add clarified butter. We make it pretty hot. And then we clean the flesh, but net all at once, otherwise roasting net, but boils only the juice ausm meat. So, portion pure, searing, portion out, the next pure. Until the meat really eat round brown.

Then comes a teaspoon of tomato paste into the hot fat. Tomato paste? Yes, should that be a tomato sauce? Nope. All we need is the roast flavor (look at wiki under "Maillard reaction").

Then neatly onion cubes in. They can be reasonably roughly diced. If the nu golden yellow (color sample: wedding ring on it ... * g *) are, the meat comes back in pot.


Now is deleted. No, net with the foam extinguisher. With broth. And red wine. Then the mushrooms come in. With the broth in which they swim. The meat must be well covered.

Now it's time to season. Since I do not want to make Hungarian goulash, but want to put the taste on the mushrooms, also net spicy is spicy. Salt / pepper from the mill comes on it. But to taste, it should not be sharp. Dried marjoram and lovage on it. A teaspoon of mustard. That's it. Sometimes less eat more.

Cover druff. And now in mild heat a good hour or more (can be two, so that one hour feels net lonely ...) stewed. Some will shout for sure, but I do not care. I do not hear it. I make a light roux and tie the sauce with it. After all, eat a kind of German goulash. And: that has tasted to EVERYONE whom I have set it. And you certainly too, because only this is finished. In addition there is n Nudel and n salad.
