Alsatian apple pie

Ingredients for the dough: (quantity for a Springform with about 24 cm diameter)

  • 200 g of flour
  • 50 g of sugar
  • 1 pinch of salt
  • 1 egg yolk
  • 2 tbsp water
  • 100 g of margarine

Ingredients for the dough

  • 40 g of ground, sweet almonds
  • 750 g apples
  • a little lemon juice
  • melted margarine

Ingredients for egg cream mass

  • 3 eggs
  • 100g vanilla sugar
  • 1/8 l of whipped cream

preparation

From the dough ingredients, a kneading dough is prepared, with which ((previously unrolled) a Springformform is lined. At the edges of the mold, the dough is pulled up a bit. Then the almonds are sprinkled on the pastry base and the apples brushed with the liquid margarine and cut into slices (apples are cut evenly longitudinally). So that the apples do not turn brown so fast, you can drizzle them with a little lemon juice.

Now the cake is baked in a preheated oven at 200 ° C for about 35 minutes. Then the 3 eggs with the vanilla sugar are stirred until frothy. The cream is then lifted under the resulting mass. Now everything is poured over the cake. Finally, before the cake is ready, it comes again for another 20 minutes at 200 ° C in the oven and is baked there.

To the apple pie fits perfectly a scoop of vanilla ice cream and some powdered sugar.
