I have this fruity-delicious apple and cheese cake in a modification of the recipe? Rhubarb cheese cake without bottom? baked by Upsi in 2017. Not only did I replace the rhubarb with apples, I also changed other ingredients and quantities a bit. The result - a nice variant for a fruity cheesecake after the rhubarb season, not only for apple fans!
Ingredients for a 28 cm springform
- about 600 g of apples
- 3 eggs
- 150 g of sugar
- 1 pck of vanilla sugar
- 750 g quark
- 250 ml buttermilk
- 1 pck of vanilla pudding powder
- 40 g semolina
- 1 teaspoon Baking powder
- Juice of ½ lemon
preparation
- The oven is preheated to 170 degrees circulating air.
- The apples are washed, quartered, freed from the core and cut into small pieces, one or two of them in narrow columns and drizzled with a little lemon juice. If you want, you can peel the apples, but that's not really necessary.
- For the dough, the eggs are beaten with sugar and vanilla sugar in a mixing bowl with the hand mixer creamy.
- Then you gradually add the other ingredients and stir everything well.
- Finally, the apple pieces are carefully lifted.
- Now fill the batter into the greased mold, smooth the surface and spread the apple slices over it.
- Bake is then about 30-35 minutes on the middle grid in the preheated oven.
(I baked the cake for 40 minutes, which made the surface a bit too dark.)
