Unfortunately, many do not have the opportunity to harvest apricots from their own tree and have no relationship or friends with a garden.
City people like me must - if they z. B. want to bake a apricot cake - then resort to goods from the supermarket and the disappointment is sometimes great when the apricots turn out to be tasteless. I have solved the problem with apricot jam.
ingredients
- 3 eggs
- 125 ml of water
- 125 ml of oil
- 125 g icing sugar
- 1 pck of vanilla sugar
- 1/2 pck of baking powder
- 250 g flour
- 1/2 lemon (juice and grated peel)
- 24 pieces of apricot halves
- 4 tbsp heated apricot jam
- Butter and breadcrumbs for the baking tray
preparation
- All ingredients (except for the flour that has been sifted with the baking powder) with the hand blender.
- Add the flour and continue to mix until a thick mass emerges.
- Now the dough is spread on the baking sheet, covered with the apricot halves (cut surface above) and baked for about 30 minutes at 175 °.
- When the cake is ready baked, each comes a teaspoon of warm jam on the slightly sunken apricots.
