Asian Crab Ham Bacon Pan with sprouts and egg

This Chinese-inspired pasta noodle pan tastes really good.

The ingredients are available in most discounters - if you are lucky and have an Asian shop on site, you will find something reasonably priced there.

  • Chinese wide egg noodles, 250 g
  • 250 g of bean sprouts
  • 2 eggs
  • 100 g bacon in slices
  • 3 spring onions
  • 200 g of small crabs, fresh from the fish stall or canned, drained off
  • Soy sauce, salt, pepper, pinch of sugar
  • Thistle oil for frying

That is how it goes:

The egg noodles only have to be boiled in salt water for a very short time, say 3 minutes. Drain.

In a large pan or wok, heat 3 tablespoons of oil and stir-fry the chopped bacon, the onion-cut spring onions, and the crabs. The drained noodles are added and fried until they have golden brown spots.

Then add the washed bean sprouts, they are fried for 1 minute, so they stay nice and crisp.


Now you need a second coated pan.

The two eggs are whisked with a little salt and pepper, and poured into the oiled hot pan. You bake a thin pancake.

This is taken out, rolled up and cut into narrow strips. The egg strips come as a garnish over the noodle pan.


Season with pepper, salt, sugar and soy sauce.

You put the bottle with the soy sauce on the table, then everyone can help themselves to taste.
