Hot Chinese noodle soup

A tasty Chinese chicken soup, which also heats in from the inside just during the World Cup!

The ingredients for my spicy soup are freely selectable:


It can be processed turkey breast, iceberg lettuce instead of Chinese cabbage; fresh mushrooms replaced dried Chinese mushrooms, you can use fine carrot and / or pepper strips, bush beans, soybean seedlings etc.

My current compilation looked like this:

ingredients

  • Chicken breast diced (2-3 pieces)
  • 1 white onion
  • 1 red onion
  • 2-3 spring onions with greenery
  • 1 handful of leek
  • 1 hand full (frozen) peas
  • 1 glass of bamboo shoots
  • 4 slices of organic limes or lemons
  • 1-2 pieces of ginger
  • Hot peppers
  • 1 glass of chicken stock (substitute bouillon or grained broth)
  • Dried Chinese mushrooms (I have taken shitake mushrooms, but also oyster mushrooms or fresh mushrooms)
  • about 3 packets of Mie noodles
  • 1/2 Chinese cabbage cut into strips

Who has it in stock:

  • lemongrass
  • Kaffir leaves (similar to lemongrass)
  • fresh coriander

preparation

  1. Soften the dried mushrooms, the Mie noodles and the kaffir leaves separately with boiling water for about 15 minutes.
  2. In a large pot, sauté the onions with the leeks and peppers in oil (preferably sesame oil), deglaze with a good shot of soy sauce, then add to that for a few more minutes.
  3. After about 5 minutes of roasting time, pour chicken stock (or broth).
  4. The remaining ingredients and the now soft mushrooms are added to the cabbage and simmered on a low flame for about 10 minutes. Pick some coriander leaves for garnish.
  5. The soya sauce hardly needs any more salt, the fresh peppers give it a sharpness, and as a spice, 2 teaspoons of a Chinese mix (such as 5-spice powder) are enough.

If there are no fresh ingredients, the following spices can be added:

  • coriander powder
  • Lemongrass powder (lemongrass)
  • ground ginger
  • chilli flakes
  • curry
  • turmeric

The finely chopped Chinese cabbage is finally lifted only briefly and no longer cooked.

The noodles are now also soft and can also be added to the soup.

Possibly. Remove the lemongrass stalks and lime slices and kaffir leaves before serving.

Sprinkle with fresh cilantro and enjoy!
