Bäckerbrötchen - make yourself

Cooking or baking time: 20 min.
Total preparation time: 2 hours

Since I currently live in the US, I miss good rolls. Here is a recipe that I use constantly. Simple - fast - good.

ingredients

  • 350 g wheat flour
  • 20 g baking malts
  • 20 g of gluten
  • 17 g of fresh yeast
  • 240 g of lukewarm water
  • 1 tsp sugar
  • 1 tsp salt

preparation

  1. Knead ingredients, let it go for 1 hour. Knead again and roll off eight pasta slices.
  2. Leave on the baking tray for 30 minutes, then cut in, sprinkle with water and bake at 200 degrees Celsius for 20 minutes.
  3. Put a small bowl of water in the oven. That's all. Backmalz I did not find in the shop, have it ordered online, but it should be in the health food store.

And yes, there are actually 240 g of water according to the recipe. Is that the same amount in ml? I dont know. But you can also weigh water.

Yummie :-) I've baked it many times, if you sprinkle it in between and afterwards in the oven with a water spray bottle, the crust is not so hard and they shine pretty.
