Baked summer vegetables

Even who is not the vegetable fan, may like this variant:

  • Cut 2 courgettes into cubes, corer 2 peppers and cut into strips, cut 4 spring onions into rings.
  • Sauté everything in 3 tablespoons oil, then add 1 crushed garlic clove and season everything with salt and pepper.
  • Distribute in a casserole dish and add 500 ml ready-made pasta sauce "tomato-herbs" (if you want, you can of course also make the sauce yourself).
  • Spread 125 g of sliced ​​mozzarella on top and drizzle with 1 tbsp of olive oil. Bake in the oven for about 30 minutes.

To taste pasta or baguette.
