Bauernschmaus

you take (for about 4 people):
750g potatoes
150g bacon (who likes to grow up)
3-4 eggs
3 tablespoons flour
some Milk
150g of ham
2 tomatoes
parsley
Salt + Pepper

Boil the potatoes with shell for about 25-30 minutes and then quench with cold water and peel. Allow to cool and then cut into thin slices. Dice the bacon and fry in a pan. Add the potato slices, salt, pepper and brown lightly.

Whisk the eggs with flour and a little milk and salt to taste. Add the diced ham. Slice the tomatoes and add to the egg milk. Pour the mixture over the potatoes and let it stand.

Garnish with parsley and serve as desired.
