ingredients

For the cake bottom you need:

  • 50 g butter
  • 80 g of curd cheese
  • 60 ml of oil (sunflower oil)
  • 200 g wheat flour smooth
  • 1/2 pkg. Baking soda
  • a cake mold with oil streaked and floured

For the curd cream you need:


  • 420 g of curd cheese
  • 1 pkg. Qimiq vanilla to 250 g (or 250 g custard homemade)
  • 100 g of sugar
  • 1 pkg. Vanilla sugar

For the cake jelly:

  • 1 pkg. Cake jelly clear (sufficient for 250 ml liquid)
  • 250 ml of water
  • 4 tablespoons lemon juice
  • 100 g of sugar

When completing or assembling the cake you need:

  • 400 g blueberries (fresh or frozen)
  • a small jar of redcurrant jelly

preparation

  1. For the dough, the butter is first frothy and then add the curd and the remaining ingredients.
  2. The dough is then divided into 2 parts and spread with the fingers on the cake bottom and then baked for about 10 minutes at 180 degrees golden brown. The second part is the same way.
  3. In the meantime, the cake jelly is prepared according to the manufacturer. I boiled 250 ml of water with 4 tablespoons of lemon juice, 100 g of sugar and then dissolved the cake jelly powder in it.
  4. For the cream of cottage cheese, first stir the Qimiq creamy and then mix with the cottage cheese, sugar and vanilla sugar.
  5. As soon as the cake bottom is cooled, it is spread with jam or jelly. The cake ring is then put on and the curd cream comes on it.
  6. The conclusion forms again a golden-brown baked cake bottom which one presses lightly and which is also coated with jam.
  7. Then you distribute the fresh blueberries.
  8. As soon as the cake jelly is only lukewarm, it is spoonfulwise over the fruits given. Let the jelly over the fruits first solidify, then distribute the rest over it. If it is already too cold and therefore thick, you can warm it gently until it becomes liquid again.
  9. The cake jelly now holds the fruit on the cake and also ensures better shelf life and also for fresher appearance.
  10. The cake then comes in the fridge for about 3 hours. Then it can be cut and tasted.

In the refrigerator, it can be stored at temperatures between 1 - 5 degrees for about 3 days.
