Briouat (Bruats): North African Stuffed Dumplings (Yufka)

At the moment, I have a penchant for stuffed dumplings that are easy to make with yufka or filo pastry.

Yufka / Filo pastry is available in every Turkish grocery store, usually packed in 10 wafer-thin dumplings.


However, one or the other discounters and supermarkets now also have these dough plates in their assortment; in the Turkish grocery they are cheaper (the pack of 1 euro).

There are countless recipes for this finger food, which reminds a little of spring rolls and tastes equally good when cold or warm. The filling can be made to your own taste: spicy, vegetarian and sweet.

Here today I present a fish filling, which I had only prepared on a trial basis.


The result was little dumplings, which men and friends did not get enough.

The dumplings are well prepared and plastered faster than you can see. It is worthwhile to prepare a larger quantity immediately.

My dumplings:


ingredients

  • 2 cod fillets
  • rice
  • 1 fresh chili pepper
  • 1 pepper
  • 2 spring onions
  • some sprigs of cilantro or smooth parsley

These spices fit well:

  • Ras-el-Hanut (oriental seasoning mix)

or

  • fennel seeds
  • oregano
  • cardamom
  • cinnamon
  • thyme
  • savory
  • turmeric
  • paprika
  • lemon zest
  • salt
  • little melted butter
  • 1 egg

preparation

  1. Peppers, chili peppers, cilantro and spring onions are chopped into very small pieces.
  2. The fish is boiled briefly in a little broth or steamed briefly in the pan.
  3. Then put it in a bowl with the spices you want and then pluck it apart with a fork and then chop it up completely.
  4. Add the cooked rice and mix well until a smooth mass is produced.
  5. Coat the dough with melted butter before processing and brush the edges generously with whisked egg,
  6. Now cut the dough into strips about 10 cm wide.
  7. Place in a corner of the filling and fold the corner to the right, then fold diagonally. If there is dough left, just fold it back. Press on the edges well.
  8. Brush all triangles with butter once more.
  9. In a convection oven bake at 180 degrees for 25 minutes until golden brown. Turn the dumplings once after half the baking time.

According to North African tradition, these dough triangles are just one of many dishes that are served at the same time. We eat a mixed salad.
