Brown cake - real north German Christmas cookies

ingredients

  • 2.5 pounds of flour
  • 1 pound cake syrup (sugar beet syrup)
  • 1 pound of sugar
  • 0.5 pounds of butter
  • 0.5 pounds of lard
  • 1 teaspoon each of cinnamon, pepper, cloves, cardamom, lemon, mace, coriander, staghorn salt and potash
  • * These are all spices, except for the potash.
  • and 1 tbsp water.

preparation

Heat syrup, sugar, butter and lard in a large saucepan while stirring until everything is melted (do not boil!). Stir several times and allow to cool until the mass is lukewarm (about 25-30 ° C also inside).

Mix the flour and spices and add to the lukewarm mass. Dissolve the potash in 1 tbsp water and add. Quickly process everything into a smooth dough.

ATTENTION: Let the dough rest for 1-2 weeks at room temperature. Then roll out, cut out and bake at 175 ° C-180 ° C for 10 minutes.

After cooling, store the cakes in tightly sealed cookie jars (airtight). This pastry is very durable, so you can bake large quantities, especially because a large part anyway in an unexplained way disappears - and before you know it, nothing is there anymore. ;-)
