ingredients
- 1 tbsp coconut oil
- 1 chopped onion
- 3 chopped tomatoes
- 1 can chickpeas
- 250 ml of coconut milk
- 2-3 tsp curry
- 1 tsp curry paste
- 1 teaspoon cumin
- Salt, pepper, chili to taste
- Rice to serve
preparation
- Heat the coconut oil, fry the onion until glassy.
- Add tomatoes and coconut milk, simmer briefly.
- Drain chickpeas and simmer for 10 minutes.
- Add curry, curry paste and cumin and simmer for another 5 minutes.
- Season with salt, pepper and chili as desired and serve with rice.
