Chickpea curry with coconut milk - vegan

Time to pamper yourself with this super delicious and vegan chickpea curry recipe with coconut milk.

ingredients

  • 1 tbsp coconut oil
  • 1 chopped onion
  • 3 chopped tomatoes
  • 1 can chickpeas
  • 250 ml of coconut milk
  • 2-3 tsp curry
  • 1 tsp curry paste
  • 1 teaspoon cumin
  • Salt, pepper, chili to taste
  • Rice to serve

preparation

  1. Heat the coconut oil, fry the onion until glassy.
  2. Add tomatoes and coconut milk, simmer briefly.
  3. Drain chickpeas and simmer for 10 minutes.
  4. Add curry, curry paste and cumin and simmer for another 5 minutes.
  5. Season with salt, pepper and chili as desired and serve with rice.
