Preparation time: 10 min.
Cooking or baking time: 1 hour 10 minutes
Total preparation time: 1 hr. 20 min.

With the Fissler pressure cooker, this stew cooks very fast. It eliminates the soaking of the chickpeas the evening before. So you can still make this hearty stew even at short notice.

ingredients

  • 250 g of dry chickpeas
  • 200 g of potatoes
  • 200 g of belly meat
  • 1.5 L vegetable stock
  • 1 bunch of birch trees
  • 1 small onion
  • 1 bay leaf
  • 1 teaspoon dried lovage
  • 1 teaspoon dried marjoram
  • nutmeg
  • Salt pepper
  • 1 teaspoon of clarified butter

preparation

  1. Put the chickpeas into the pressure cooker and pour water into half of the pot. The chickpeas absorb so much water. Close the pot, set to cooking level 2 and boil at the highest heat setting. As soon as the green ring in the cooking crown becomes visible, reduce the heating level. This starts a cooking time of 50 minutes. Then let the pot evaporate and open. Drain off the cooking water completely, as it is no longer edible. The chickpeas are now soft.
  2. Cut belly meat into bite-sized pieces. Cut the leek into fine rings, celery and carrot into small pieces. Also dice the potatoes.
  3. Gently fry the belly meat in the pressure cooker in buttered lard, add the chickpeas and all the vegetables and fill up with the broth. Close the lid, set to cooking level 2 and cook at the highest heat setting. When the green ring appears, lower the heat setting again and let it cook for 10 minutes.
  4. Then let the pot evaporate. When the lid is open, mix briefly with the blender, so that the stew is creamy, but still good half of the vegetables remains lumpy. Season with salt, pepper and nutmeg. If you like it a bit more hearty, you can join the second cooking process with Mettenden. Depending on your taste, you can sprinkle finely chopped parsley or cilantro on the soup plate. Good Appetite.

info

In this way, a tasty stew is prepared within 1.5 hours in the pressure cooker. Of course you can also take 1-2 cans of peas instead of the dried chickpeas. I think the canned goods but not so tasty. Therefore, the pressure cooker is particularly well suited here.
