Creme fraiche cake

Ingredients for the dough:
- 3 eggs
- 150 g of sugar
- 300 g of flour
- 1 baking powder
- 1 packet of grated lemon peel
- 300 g creme fraiche
preparation
- Beat the eggs, sugar and grated lemon zest until creamy. Mix the flour with the baking powder and mix carefully together with the creme fraiche.
- Spread the dough on a well-greased baking sheet.
- Preheat the oven to 190 degrees. Bake the cake for about 10 minutes.
Preparation of the coating:
- Put 150 g of crème fraîche in a saucepan, add 125 g of butter, 150 g of sugar and 1 vanilla sugar and heat slowly over a gentle heat until the butter has melted. Stir well and remove from heat.
- Coat the pre-baked cake with the toppings, sprinkle with 150 g of sliced almonds and bake at the same heat.
- This takes about 25-30 minutes (rod sample).
- After baking, allow the cake to cool and sprinkle with couverture.
- Melt 50 g of half-bitter couverture and 1 teaspoon cooking oil in a small saucepan in a water bath (stirring constantly).
- Cool the cake well.
