Spinach Pita

Total preparation time: 1 hr. 10 min.

ingredients

Approximate information (depending on the size of the baking tray). These are the quantities I take for a big baking sheet:

  • 1.1 kg of spinach (cream spinach or leaf spinach, but with creamed spinach, it is tastier)
  • 8 eggs
  • 400-500 g feta cheese
  • 500-600g puff pastry
  • 3-4 onions

Preparation:

  1. Grease the baking sheet well.
  2. Roll out half of the puff pastry very thinly and place it on the plate (while hanging a good piece over the edge so that you can fold it down later on, important as creamed spinach can be rather fluid).
  3. Chop the onions and sauté.
  4. Cook the spinach, add 4 eggs and add. Add onions. Remove the pan from the stove.
  5. Dice the sheep's cheese and put it under the spinach.
  6. Season as desired. I add a little more sheep's cheese and only season with some salt.
  7. Cook the remaining 4 eggs hard, peel and slice.
  8. Distribute the spinach mixture on the baking sheet and place the slices on top.
  9. Fold over the protruding edges.
  10. Spread the remaining, thinly-rolled puff pastry over the mass. Press everything well.
  11. At 200 ° C (top and bottom heat) approx. 35-40 minutes.

Tip: Once again warmed up the next day it tastes even better :)
