Spinach Pita

Approximate information (depending on the size of the baking tray). These are the quantities I take for a big baking sheet:
- 1.1 kg of spinach (cream spinach or leaf spinach, but with creamed spinach, it is tastier)
- 8 eggs
- 400-500 g feta cheese
- 500-600g puff pastry
- 3-4 onions
Preparation:
- Grease the baking sheet well.
- Roll out half of the puff pastry very thinly and place it on the plate (while hanging a good piece over the edge so that you can fold it down later on, important as creamed spinach can be rather fluid).
- Chop the onions and sauté.
- Cook the spinach, add 4 eggs and add. Add onions. Remove the pan from the stove.
- Dice the sheep's cheese and put it under the spinach.
- Season as desired. I add a little more sheep's cheese and only season with some salt.
- Cook the remaining 4 eggs hard, peel and slice.
- Distribute the spinach mixture on the baking sheet and place the slices on top.
- Fold over the protruding edges.
- Spread the remaining, thinly-rolled puff pastry over the mass. Press everything well.
- At 200 ° C (top and bottom heat) approx. 35-40 minutes.
Tip: Once again warmed up the next day it tastes even better :)
