Delicious lemon cake

A delicious lemon cake baked in a box shape, which succeed even beginners like me.

?Ingredients

  • 5 eggs Gr. M
  • 250 g powdered sugar
  • 2 pck vanilla sugar
  • 1/4 l oil, neutral
  • 1/4 L eggnog
  • 150 g of flour
  • 150 g cornstarch
  • 1 pck of baking soda
  • Abrasion of an untreated lemon (aging, finished product)
  • 1 pinch of salt

?Preparation

  1. Beat the eggs, icing sugar, vanilla sugar and oil until well frothy, it is best to use a hand mixer at the highest level.
  2. Then stir in the egg liqueur and add the lemon zest, (I have used the finished lemon abrasion, lies with the baking ingredients in the supermarket) do not forget the pinch of salt.
  3. Sieve the flour, cornflour and baking powder and mix carefully with the hand mixer at the lowest level.
  4. Preheat oven bottom and top heat to 200 degrees.
  5. Then fill the finished cake dough into a box mold.
  6. Since the dough is very liquid, you should better lay out the shape with baking paper and leave a little over the edge. Then nothing comes out of the baking pan and you can better lift it out when it's done.
  7. The baking time is a good hour, depending on the oven (make a stick sample). After 45 minutes maybe cover the cake so it is not too dark.
  8. Then you can either sprinkle with powdered sugar or cover it with lemon icing (which is also available).
  9. I covered the still warm cake first with apricot jam and then, when all was cold, lemon frosting was spread over it.
