Eggs with spinach on mashed potatoes

Eggs with spinach on mashed potatoes

ingredients

  • Potatoes depending on size and discretion and number of people
  • 500 g deep-frozen and finely chopped spinach
  • 2 eggs, best size L
  • 1 tbsp of virgin olive oil
  • some milk (for puree, as you like)
  • some nutmeg, grated
  • optional curry powder
  • pepper and salt
  • 2-3 teaspoons vegetable horseradish

preparation

  1. Boil the eggs and put them aside.
  2. Wash the potatoes, peel and cook in salted water.
  3. Put some olive oil in a pot and add the frozen spinach, season with a little salt, pepper and nutmeg. For a special and strong taste, add some curry powder and bring everything to a boil and stir well, so that nothing burns.
  4. Peel the eggs and add to the spinach just before it is cooked. Keep warm on low heat.
  5. Drain the potatoes and stomp well with the potato masher, add milk as you like (I do not use butter, as this is not necessary) and stir the vegetable horseradish well in the mashed potatoes, add some nutmeg and, if necessary, add some salt.
  6. Arrange the mashed potatoes on a plate and add the spinach with the eggs.
