Now that the elderberry is about to blossom, it's time to introduce another jelly recipe.

preparation
- If possible, cut off elder flowers in dry weather and then water over the sieve.
- For 200 g of elderflower (dry weight), add 800 ml of water, bring the pot to the boil in the pot (about 10 minutes) and then let it rest overnight at room temperature.
- Drain the sauce over a sieve into a saucepan and make up to 1 liter with water.
- Add the juice of half a lemon and 1 kg jelly sugar (1: 1).
- Cook everything together for at least 4 minutes.
- Finally pour into hot rinsed glasses and close the jars immediately with a lid.
