Fine spring stew

A fine recipe for a great spring stew with cilantro.
ingredients for 4 persons
- 600 g of potatoes
- 375 g of carrots
- 600 g kohlrabi
- 750 g of cauliflower
- 1 onion
- 2 tsp coriander seeds
- 2 tablespoons butter or margarine
- 1 1/2 L vegetable stock (instant)
- 1 pot of cilantro
- salt and pepper
- 30 g pumpkin seeds
preparation
- Peel potatoes, carrots and kohlrabi. Slice carrots into slices, potatoes and kohlrabi. Clean the cauliflower, divide into florets. Chop the onion. Grind the coriander seeds roughly.
- Heat the fat in a saucepan, fry the onion and coriander in it. Add vegetables, sauté briefly, deglaze with broth and simmer for about 20 minutes until the vegetables are cooked.
- Chop coriander leaves. Season the vegetable stew with salt, pepper and ground coriander, sprinkle with pumpkin seeds and coriander leaves.
