Fish cordon bleu

Twice a week fish was one of my good intentions for 2015 and in the usual way he was already bored after a few weeks. So I made a fish cordon bleu that was well received.

Ingredients for 2 persons:

  • 4 pieces of redfish, salmon or cod fillet
  • 4 slices of black forest or peasant ham or milder ham bacon
  • 1 packet of cream cheese or oven cheese - variety of your choice: herbs, chili, horseradish, garlic, Mediterranean ...
  • Parsley and / or dill, finely chopped
  • 2 eggs
  • Flour
  • Cornflakes with breadcrumbs
  • Salt pepper
  • Fat for frying

preparation

  1. Wash the fillets, pat dry.
  2. Put a slice of ham on 2 fillets.
  3. Spread the other 2 fillets with the cream cheese.
  4. Spread dill or parsley on top and season.
  5. Fix with toothpicks or kitchen tape.
  6. Beat eggs.
  7. Crumble cornflakes and mix with breadcrumbs.
  8. Now pull the fillets through the egg mass, turn into flour.
  9. Bread with the cornflakes.
  10. Bake in hot oil from both sides until golden brown.

To taste boiled potatoes with a light wine / herbal sauce, colorful vegetables and a light Riesling.
