- 500 g asparagus (or more)
- Grained vegetable stock
- Salt, pepper, nutmeg

- 2 egg yolks

- Wash asparagus very well, peel, cut into pieces about 2 cm long.
- Boil the water first - then let it simmer for about 10 minutes. Sifting shells out of the water. In this water then simmer the asparagus pieces with the grained broth for about 10 minutes (until asparagus is soft).
